I have been wanting to make 'homemade sausages'. Finally, I tried to make them!! I bought a big cut of pig rib, and I tried to mince the meat with a food processor. However, the food processor couldn't mince the fatty meat. So, I rushed to buy a mincer. I tried to mince the meat with the mincer, and I managed to do it.. I should have minced the lean meat and fat separately. I made three kinds of sausages using the minced meat.
1. 'White sausage'
600g minced meat, 1g natmeg powder, 1g sage powder, 1g laurel powder, 1g black pepper, and an adequate dose of fresh thyme, fresh parsely and lemon balm, 10g salt
2. 'Smoked sausage and choriso'
600g minced meat, 1g natmeg powder, 1g sage powder, 1g laurel powder, 1g black pepper, 1g thyme poder, 10g salt *mix these ingredients and divide in half. To one side, add an adequate dose of indian paprika.
After mixing all ingredients well, mix while slowly adding cold water and egg white. The meat is stuffed into a casing. No.1 sausages are boiled at 70~80℃, No.2 sausages are smoked. I smoked the cheese and the salmon at the same time. This picture don't show the 'White sausage'. We ate the sausage before taking this picture because it was too delicious!!
